Last day of freedom

Back to the grindstone tomorrow and not looking forward to it one bit. Have loved the freedom of being home, waking up when I want, pottering around the kitchen and garden, not feeling so exhausted and lacking in energy. Back to sitting in a windowless office dealing with mind numbing paperwork  just when the summer has finally arrived too!

The final shopping bill for the new strict budget regime came in at £49.55 for 7 days worth of food for two people. It's quite hard to stick to the definitive list of requirements and avoid tempting looking offers and interesting looking foods. It's easy to see how supermarket psychology tempts us to spend more than necessary. I swapped things around a little from the menu planned in my last post so we had boiled egg and soldiers for breakfast yesterday and the sweet potato and broccoli hash today, mainly because of a lazy morning in bed. The gnocchi were delicious and very easy to make. The recipe is from the Meat Free Monday Cook Book, which I recommend very much.

Washing a kilo gram of spinach

Unwashed spinach is relatively cheap and I saved some for later in the week when I will use it both the noodle soup and curry. The rest (about 700g) went into the gnocchi with some onion, ricotta, spelt flour, Parmesan and egg yolks.

I served the gnocchi with a simple tomato sauce made from a tin of tomatoes, onion, garlic, chili and basil and a little extra Parmesan.
