Budget, week 6

Another week of more money spent on food than planned, so far this has been a most unsuccessful challenge.   It is the last bank holiday of the year though, so a few treats are allowed. Typically for a British bank holiday, the weather is distinctly Autumn-like and all the sun from the past few days has been blown away by the cold and wet. Taking advantage of a supermarket deal we have steak on Monday but any savings there were lost in purchasing two fresh salmon fillets for tonight's meal.

This week's menu -


Budget week 6
Saturday -
Breakfast: Coffee and toast with honey and ginger
Lunch: a shop bought pizza
Dinner: salmon wrapped in prosciutto with lentils, herbs and wilted spinach

Sunday -
Breakfast: Boiled egg and marmite soldiers
Lunch: a pot of green tea
Dinner: Chilli with beef and turtle beans, brown rice

Monday -
Breakfast: Sweet potato and broccoli hash with a fried egg
Lunch: toasted sandwich with leftover prosciutto, goats cheese, homegrown tomato, spinach, coriander and humus
Dinner: steak with green beans and parmentier potatoes

Tuesday -
Breakfast: yogurt, fruit and granola
Lunch: vegetable spaghetti salad
Dinner: prawns with noodles and coriander pesto

Wednesday -
Breakfast: yogurt, fruit and granola
Lunch: roast butternut squash salad
Dinner: chicken curry with brown basmati rice, mung bean dhal and wholemeal chappati

Thursday -
Breakfast: yogurt, fruit and granola
Lunch: leftover dhal and chapatti
Dinner: venison sausages and lentils

Friday -
Breakfast: yogurt, fruit and granola
Lunch: lentil, goats cheese and red pepper salad
Dinner: Fish and chips with peas (from the freezer)

Saturday's supper
The salmon is an easy dish, from an early Jamie Oliver cookbook. Just a piece of fish wrapped in prosciutto and baked in the oven and served with Puy lentils, seasoned with lemon juice, garden herbs, olive oil and stirred through with fresh spinach until wilted and a final drizzle of some seasoned yoghurt. Takes about 30 minutes max and involves minimum prep, perfect for Saturday night.
