Mackerel and Onions

Working from home after a very early start and long drive to Stansted Airport to drop off the fellow thrifty resident for a few days work in Portugal. Whacked up the volume on the stereo on the way back and sang along at the top of my voice whilst speeding along the fast lane (it's a bit easy in this car...whoops!). Spring has definitely gone into hibernation, it's windy, raining and very very cold. There are even reports of snow further north and I have about three chilblains.

Whilst on my own, I can indulge in my addiction to fish in tins. Today's lunch was a mackerel pate made from two tins of mackerel, some English mustard, creme fraiche and lemon juice on toasted sourdough with some quick pickled onions and parsley from a recipe in the weekend papers by Hugh Fearnley Whittingstall (this recipe and a few more can be found here). I also added some horseradish and I think this worked better than the mustard. The pickled onion definitely works though and is lovely.

Tonight's meal for one is leftover chick pea and bulgur wheat soup from the night before. Another thrifty meal and another recipe from the weekend papers, this time from Yotam Ottolenghi (recipe here). It's very simple but very satisfying and quite delicious, will definitely make this again. It's also very very cheap, the most expensive ingredient being the harissa (we use Belazu Rose Harissa, which is roughly £4 but is by far the best of those generally available).
