Thrifty meal planning
Bills arrive this month and we're trying to save some money for future plans so super thrifty eating is back on course. Our well stocked freezer is slowly being cleared (and my lack of accurate labelling is revealing some rather tasty surprises) supplemented by a variety of pulses in all their wholesome (and very cheap) glory.
Monday
Lunch: Leftover curry from the weekend with a chapatti
Dinner: Sausage and white bean stew (using the beans above and spinach from the garden)
Tuesday
Lunch: Leftover sausage and white bean stew
Dinner: Lentil and pancetta soup
Wednesday
Lunch: Lentil salad (using excess cooked lentils from Tuesday and veg from the garden)
Dinner: Spanish style baked rice (using tomatoes from the garden)
Thursday
Lunch: German pumpernickel and odds and ends from the fridge
Dinner: Broccoli and stilton soup
Friday
Lunch: Leftover broccoli and stilton soup
Dinner: Penne arrabiata (tomatoes and chillies from the garden)
I'd love to hear from you if you have some unusual thrifty (and healthy) recipes.
